From the lush mountains of Caquetá — one of Colombia’s most exciting emerging coffee regions — this Castillo varietal is natural-processed to bring out its wild, complex character. The cup opens with deep molasses and cocoa nibs, lifted by the clean brightness of black tea. The body is creamy and satisfying, with a malic acidity (think green apple) that keeps each sip lively. A whisper of spice in the finish ties it all together. Grown at 1,750 meters by farmer Andres Rodriguez at Finca La Esmeralda, this micro-lot scored 87 SCA points.
